Melon and Cucumber Salad with Mint & Black Pepper

Refreshing end of summer salad. Serves as a great accompaniment to a hearty entrée.

Ingredients
- Serves 4 to 6
- 1 ripe honey dew or similar. An aromatic is best
- 1 small to medium size Armenian cucumber or one 1 medium Japanese cucumber
- 1 tablespoon of chopped mint
- 2 teaspoons of lemon juice
- lemon zest of one lemon
- sea salt and ½ teaspoon of freshly grated pepper
- 2 tablespoons f olive oil or avocado oil
- mint sprigs to garnish
- Goat Cheese or Feta (optional)
Directions
- Half and seed melon, slice into sections. Cut melon into bite size pieces. Chop cucumber without peeling them. Put cucumber and melon in salad bowl.
- Stir together mint, lemon zest, lemon juice, black pepper and salt. Then whisk in oil. Toss melon and cumber with dressing. Chill for 1 hour or longer. To serve grind pepper on top lightly. and finish with mint sprigs. If adding goat cheese or Feta, crumble on top.
