Fresh Cherry Lavender Bread
 
Use fresh stone fruit like cherries, if you do not have cherries try apricots. Add a hint of lavender to this moist delicious sweet bread.

  • ⅔ cup unsalted butter, room temperature
  • ¾ cup + 1 TB granulated sugar
  • 1 tsp lavender buds
  • 1 tsp vanilla extract
  • 3 large eggs
  • ⅔ cup Greek yogurt or sour cream
  • 2 cups + 2 TB all-purpose flour
  • 2 tsp baking powder
  • 2 cups fresh cherries, pitted and roughly chopped
  • 2 TB brown sugar
  • Icing sugar, for dusting (optional)
Directions
  1. Preheat oven to 350°F. Grease and line a loaf pan with parchment paper.
  2. Pit and roughly chop the cherries.
  3. Beat butter and sugar until light and fluffy. Mix in vanilla, eggs, and yogurt until combined.
  4. In an herb or smoothie blender grind one teaspoon of lavender buds (like Folgate or another angustifolia) with 2 tablespoons of sugar until fine. Add back to the rest of the sugar and blend.
  5. Add 1 teaspoon to two tablespoons(this is part of the ¾ cup of sugar)
  6. In a separate bowl, whisk together flour and baking powder. Fold into the wet ingredients until just combined.
  7. Fold in about two-thirds of the cherries.
  8. Butter or oil a 12x5x3 loaf tin. Lightly sprinkle with plain breadcrumbs (optional). Pour batter into the tin. Scatter remaining cherries on top and sprinkle with brown sugar.
  9. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 15–20 minutes, then transfer to a wire rack to cool completely.
  11. Dust with icing sugar before serving if desired.
