Fresh Cherry Lavender Bread
Use fresh stone fruit like cherries, if you do not have cherries try apricots. Add a hint of lavender to this moist delicious sweet bread.

Ingredients
- ⅔ cup unsalted butter, room temperature
- ¾ cup + 1 TB granulated sugar
- 1 tsp lavender buds
- 1 tsp vanilla extract
- 3 large eggs
- ⅔ cup Greek yogurt or sour cream
- 2 cups + 2 TB all-purpose flour
- 2 tsp baking powder
- 2 cups fresh cherries, pitted and roughly chopped
- 2 TB brown sugar
- Icing sugar, for dusting (optional)
Directions
- Preheat oven to 350°F. Grease and line a loaf pan with parchment paper.
- Pit and roughly chop the cherries.
- Beat butter and sugar until light and fluffy. Mix in vanilla, eggs, and yogurt until combined.
- In an herb or smoothie blender grind one teaspoon of lavender buds (like Folgate or another angustifolia) with 2 tablespoons of sugar until fine. Add back to the rest of the sugar and blend.
- Add 1 teaspoon to two tablespoons(this is part of the ¾ cup of sugar)
- In a separate bowl, whisk together flour and baking powder. Fold into the wet ingredients until just combined.
- Fold in about two-thirds of the cherries.
- Butter or oil a 12x5x3 loaf tin. Lightly sprinkle with plain breadcrumbs (optional). Pour batter into the tin. Scatter remaining cherries on top and sprinkle with brown sugar.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 15–20 minutes, then transfer to a wire rack to cool completely.
- Dust with icing sugar before serving if desired.
